The Hill: Chickens, Ducks, and Eggs

The chickens, ducks, and eggs we use in our dishes come from an organic farm nestled in the rice paddies in Middle Lombok. This farm is committed to humane, chemical-free farming practices, allowing their animals to roam freely in a healthy, natural habitat. The result? The flavour of the poultry is rich and succulent, which more than makes up for their smaller size.

Goat Farm: Fresh Goat Milk from Mister Eddy

Our cheeses are made in-house with fresh goat milk sourced from a family-run farm in east Lombok.

Daily Fresh Catch: Local Fishermen Adi and Ahmad

Our fish is delivered fresh each morning by small-scale fishermen. Sustainable fishing methods ensure high quality seafood while protecting the marine ecosystems for future generations.

BSF Lombok: Turning Waste into Opportunity

We collaborate with BSF Lombok to manage our organic waste sustainably. Through an innovative composting process, BSF Lombok transforms food scraps from our kitchen into compost, which is then distributed to local farmers. This initiative not only helps reduce landfill waste but also creates jobs and supports local agriculture, making a positive impact on both the environment and the community
